1 low-fat whole wheat tortilla1 whole egg + 2 egg whites, mixed2 tablespoons chopped onions2 tablespoons chopped red bell pepper1 teaspoon chopped green chile (optional)2 tablespoon shredded low-fat cheese (e.g. sharp cheddar or Monterey Jack)1 teaspoon chives, chopped
1 tablespoon low fat sour cream
2 tablespoons turkey bacon, chopped1 tablespoon chunky salsa
Salt and pepper, to taste
Spray a small frying pan with nonstick cooking spray. Saute the onions, bell peppers, and chile over medium-heat until the onions are translucent. Add in the egg mixture and scramble gently until just before it reaches desired doneness. Mix in cheese for the final seconds of cooking.
Microwave the tortilla between 2 sheets of paper towel for 10 seconds to soften it. Then, place the tortilla flat on a plate and add the scrambled eggs on top. Add the chives, sour cream and the salsa over the egg, add salt and pepper to taste, and wrap up the tortilla.
