1 lb. Sage Cheddar*
4 Fresh To Market boneless skinless chicken breasts
1 small jar marinara sauce
2 tablespoons extra-virgin olive oil
Kosher or sea salt and cracked black pepper to taste
Preheat oven to 400ºF.
Cut Cheddar lengthwise into 4 equal pieces. Slice an opening horizontally into the thickest end of each chicken breast: wide enough and deep enough to insert the entire length of cheese. Season the chicken breast with salt and pepper.
Heat olive oil in an oven-safe skillet over high heat. Sear chicken on both sides; remove pan from heat, then pour marinara evenly over the chicken and in the pan. Transfer skillet to oven, baking the dish for an additional 20-30 minutes.
Remove promptly; let sit 5-6 minutes and serve.
*If you cannot find sage cheddar you can use any white cheese of your choice and add a small amount of finely chopped sage.
