1 pound pork tenderloin, cut into 1/2-inch slices
3 teaspoons reduced-sodium soy sauce
2 teaspoons Thai seasoning (or you can make your own-see recipe below)
1 bunch green onions (7 or 8), chopped
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup water
1 egg, lightly beaten
2 teaspoons vegetable oil
1/4 cup peanut butter
1 tablespoon honey
1/3 cup water
1 carrot, shredded
Fresh cilantro and lime wedges (optional)
1.Preheat broiler. Thread pork onto eight skewers; brush with 1 teaspoon of the soy sauce and sprinkle with 1 teaspoon of the Thai seasoning. Broil 3 to 4 inches from the heat for 8 minutes, turning once halfway through cooking.
2.For cakes, combine onions, flour, baking powder, the 1/2 cup water, the egg, and the remaining Thai seasoning. In a 12-inch skillet heat oil over medium-high. Spread batter in skillet; cook for 10 to 12 minutes, turning once. Cut into wedges.
3.For sauce, in a microwave-safe bowl combine peanut butter, honey, the remaining soy sauce, and the 1/3 cup water. Cook on 100 percent power (high) for 30 seconds. Whisk; cook for 15 seconds more. Serve kabobs with cakes, sauce, and shredded carrot. If desired, serve with cilantro and lime wedges.
1/2 tablespoon ground cumin
1 tablespoon sea salt
1 tablespoon fresh ground white pepper
1 tablespoon fresh ground black pepper
1 tablespoon ground dried hot Thai red chili pepper (to taste)
2 tablespoons dried lemongrass (ground powder)
2 tablespoons dried lime zest
2 tablespoons garlic powder
2 tablespoons ground ginger
2 tablespoons dried mint
2 tablespoons toasted unsweetened coconut, ground
1 -2 tablespoon brown sugar (optional)
Process all ingredients in a food processor or bash together with a pestal and mortar. Seal in an airtight container.
