Chocolate Cheesecake Muffins


Ingredients:

Filling:
1 8oz. cream cheese
1 egg
1 cup chocolate chips
⅛ teaspoon salt
⅓ cup sugar
1 tablespoon lemon juice

Muffin:
1½ cup flour
1 cup sugar
¼ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup water
½ cup cooking oil
1 tablespoon white vinegar
1 teaspoon vanilla

Directions:

Combine all ingredients for the filling and set aside. Sift the dry ingredients. Mix water, oil, vinegar, and vanilla. Mix until well blended. Line muffin pan with paper liners.

Fill 1/3 full and then add 1 tablespoon cream cheese mixure. Then fill with batter to 2/3 full.

Bake at 325° F for 24 to 26 minutes.
