These are simply...AMAZING! I had a similar dish at a small restaurant in Portland, Oregon called The Tin Shed Garden Cafe. Their Jammy Davis Jr. Quesadilla with roasted sweet potatoes, black beans, cheddar cheese and jalapenos wrapped in a flour tortilla was incredible, so when I saw this recipe for Baked Black Bean & Sweet Potato Flautas from Peas and Crayons that had similar ingredients I was sold. What I also love about this recipe is that it is baked and not fried, unlike the one I had. Crispy baked perfection!
