Hanna's Sweet and Spicy Jalapeno and Orange Glazed Salmon


After all of these years watching me in the kitchen, my daughter has finally taken an interest in cooking and baking.  Last night she came up with this amazing recipe for Sweet and Spicy Jalapeno Baked Salmon.  It was amazing and I look forward to other tasty recipes that she creates!

Ingredients:

1/2 cup pulp-free orange juice
1/4 cup orange rind
1/4 cup diced jalapenos, devein and remove all of the seeds
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
2 tbsp Thai sweet chili sauce
4 boneless salmon fillets, about 5 oz each
3/4 teaspoon salt
3/4 teaspoon pepper


Directions:

Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, jalapenos, orange rind, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.

Arrange fish on a baking sheet sprayed with non-stick cooking spray. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Remove from oven and brush with Thai sweet chili sauce.  Serve immediately.
