So Easy Low Fat Turkey Tortilla Soup

I love easy soup recipes...especially one that you can cook in one pot!  Saute your onions and garlic, toss in the remaining ingredients and occasionally stir. I added some non-traditional ingredients to up the fiber and nutritional value of the soup. Including prep time, this recipe takes about one hour to make. Incredibly easy and delicious!

Ingredients:

1-2 tbs olive oil
6 garlic cloves, minced
1 small onion, diced
1/2 pkg taco seasoning (you can use hot or mild)
2 tsp chili powder
2 tsp ground cumin
1 tbsp parsley, dried
1 1/2 tsp sugar
1 tsp paprika
1 tsp crushed red pepper flakes (optional)
1 can diced green chilies
2 cups roasted turkey or chicken breast, shredded
2-14 1/2 ounce cans diced tomatoes with chilies

1-15 oz can black beans, rinsed and drained
1-15 oz can red kidney beans, rinsed and drained
3 carrots, thinly sliced
1 green bell pepper, chopped
1 bag mixed frozen vegetables
3 stalks of celery, thinly sliced
1/4 cup cilantro, finely chopped
4-14.5 cans of chicken broth
1-10 ounce pkg frozen corn

2 tbsp lime juice
Salt and pepper to taste
A handful corn tortillas broken into very small pieces, plus extra for top

Toppings (optional):

1 avocado, thinly sliced
corn tortillas (I like to use tortillas strips)
1/2 cup light cheddar cheese, shredded
light sour cream
lime wedges


Directions:

In a large pot, heat oil over medium. Saute garlic and onions about 3 minutes. Add precooked turkey or chicken, chili powder, cumin, parsley, sugar, paprika and sugar. Cook another minute or so.

Add tomatoes (with juice), beans, 
carrots, green bell pepper, mixed frozen vegetables, celery, cilantro, broth, corn, diced chilies and lime juice to the pot; season with salt and pepper.

Bring soup to a boil and reduce to a simmer. Add broken up tortillas and cook until tortillas have dissolved (5 to 10 minutes). Simmer over low heat for approximately 30 minutes to allow the flavors to merge.

Serve with shredded cheese, tortilla chips (strips), sliced avocado, sour cream and one slice of lime drizzled over the top. Enjoy!
