Simple Spicy Italian Chicken Meatballs
4 spicy chicken sausage links, casings removed
½ small onion, fine dice
4 cloves garlic, pressed
1/4 cup mozzarella cheese, grated
2 tbsp parsley, finely chopped
2 tbsp basil, finely chopped
Salt and pepper
Preheat oven to 400 degrees.
In a large bowl, combine the ground sausage with remaining ingredients.
Coat a baking sheet with non-stick spray.
Roll the mixture into about 20 meatballs and line them on the baking sheet.
Place in the oven and bake until the meatballs are cooked through and golden brown, about 10 to 12 minutes. *Remove from oven. Serve with marinara or your favorite pasta sauce. Enjoy!
*Note: If serving for a brunch or party you can place these in a slow cooker. Set slow cooker on high for the first 20 minites and then reduce heat to low.
