Savory Panko Breaded Cod Fillets


Ingredients:

4-5oz fish fillets, fresh or frozen
2 eggs
1/4 cup of milk
1 cup of panko bread crumbs
1/4 cup of fresh grated parmesan cheese
1/4 cup fresh Italian flat leaf parsley, reserve 2 tbsp for garnish
1 tsp of garlic salt
1/2 tsp onion powder
1 tsp of fresh ground black pepper
1/2 tsp paprika
1/4 tsp sugar
3 tbsp of extra virgin olive oil
2 tbsp of butter
red pepper flakes


Directions:

Rinse the cod under cold water and pat dry with a paper towel.

In a shallow bowl whisk together the eggs and milk.




In another shallow bowl, mix together the breadcrumbs, cheese, parsley, garlic salt, onion powder, black pepper, and sugar.

Dip the cod into the egg mixture then coat with the breadcrumb mixture. Set in a baking sheet until oil and butter are hot. 

Heat the oil and butter in a large frying pan.




Fry the cod until golden brown. Around 4 to 5 minutes on each side. Make sure not to overcrowd pan. Cook in two batches. 



Drain on a paper towel and serve. Sprinkle with red pepper flakes and additional chopped parsley,. Enjoy
