Spinach, Chicken Sausage, Egg & Cheese Breakfast Casserole


Ingredients:

12 links of chicken sausage, sliced into 1/3 inch slices 
1 small onion, diced

8 large eggs
1/3 cup milk
1 cup spinach

1/2 tsp of each pepper,  garlic salt, dill, red chili flakes, granulated garlic
1/2 cup scallions, finely sliced
3/4 cup shredded light cheddar
1 cup tomatoes, cut into quarters
1 avocado, thinly sliced


Directions:

Preheat oven at 425 degrees. 



Slice sausages and chop onions (
sausages by Amy Lu from Costco is a great one~ low fat and delicious). Heat a sauté pan with one teaspoon of olive oil on medium high heat and add sausages and onions. Cook through, will take about 5 minutes depending on the size of the pieces. Set aside and allow to cool. 


In a bowl, whisk together the eggs, milk, salt & pepper. Stir in the spinach, spices, sausage and onion, and half of cheese. 



Oh my word! Haven't seen one of these in ages!
Cooking at a vacation timeshare make me appreciate and miss my kitchen :-)


Spray an 8 x 8 baking dish non stick spray. Pour in glass dish and top with remaining cheeseBake for approximately 40-45 minutes or until the center is set and cheese is golden brown. Top \off with chopped tomatoes and sliced avocado. Enjoy!
