8 ounces smoked gouda, shredded
8 ounces sharp cheddar, shredded
8 ounces smoke cheddar, shredded
12 slices of apple wood smoked bacon, cooked and drained
2 avocados, skin/seed removed and thinly sliced
8 slices of good quality bread (I used Irish cheddar and bacon bread)
Grate cheese and set aside. Cook back in a pan until crispy and brown. Drain on paper towels and set aside. Butter both a single side of each slice of bread. Heat a griddle or large skillet on medium high and place buttered side of bread face down.
Place 3 slices of bacon on bread and sprinkle with a quarter of the grated cheese. Lay slices of avocado over the cheese.
Top with second slice of bread with buttered side facing out.
Reduce heat to medium and flip over sandwich when the bottom is golden brown.
Continue cooking until second side is golden brown. Cut in half and serve with your favorite soup or salad. Enjoy!
