Simple Popcorn Chicken from Blog Chef.net


This recipe for Popcorn Chicken from Blog Chef.net is so easy to make.  Set up an assembly line for dredging and breading and you can turn out a ton of these little crispy bite size morsels in no time. For quick clean up I like using a ziplock bag for the seasoned flour and one for the panko bread crumbs.  When you are done you just toss the bag and that leaves 2 less plates to wash. If you do all of your dredging and breading over a large baking sheet you will also cut down on the flour and crumbs getting on the counter and flour ( how it gets on the floor I do not know, but it just does!). Easy Cherry Cheesecake Pancakes


Ingredients

Pancakes:
11/4 cups all-purpose flour
11/4 cups buttermilk
1 large egg
1/4 cup vegetable oil
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
2 cups chopped frozen cheesecake

*Topping:
1-8oz pkg of cream cheese, softened 
1/4 butter, softened 
1/2 cup powdered sugar 
1/2 tsp vanilla 

1 can of cherry pie filling, warmed
cooking spray 

* To bring down the sweetness level you can omit the cream cheese topping and just use the cherries alone.


Directions:

Preheat the oven to 200 degrees F.
In a mixing bowl, combine cream cheese, butter, powdered sugar and vanilla. Whip until smooth. Refrigerate until all of pancakes are cooked.

Pulse the flour, buttermilk, egg, vegetable oil, granulated sugar, baking powder, baking soda and salt in a blender until smooth. Transfer to a bowl and stir in the cheesecake pieces, keeping them whole.

Coat a large nonstick skillet or griddle with cooking spray and heat over medium heat. Working in batches, pour about 1/4 cup batter into the skillet for each pancake. Cook until bubbly on top, about 4 minutes, then flip and cook until the other side is golden brown, about 2 more minutes.


Transfer the finished pancakes to a baking sheet and keep warm in the oven. Serve the pancakes topped with the cheesecake filling and warm cherries topping. Enjoy!

Crazy Good Slow Cooker Pulled Pork Chili





This slow cooker pulled pork chili is so easy to make! You literally throw everything into the slow cooker and forget it for 10-12 hours. After that all you do is pull out the pork, shred it up, and add it back in to the chili...super quick and easy! Serve this chili with my Delectable Chipotle Cheddar, Corn & Bacon Corn Bread (click on link to be taken to recipe) for a perfect side. I hope you enjoy this recipe as much as we do. Enjoy!




Ingredients:


2-14.5 oz. cans cans fat-free reduced-sodium chicken broth
3-10 oz. cans RO*TEL diced tomatoes with green chilies, undrained

1-15.5 oz. can cannellini beans, rinsed
1-15.5 oz. can navy beans, rinsed
2-28 oz can baked beans
1 large onion, chopped
4 cloves garlic, finely chopped
1-4 oz can dice green chilies
1-4 oz can diced jalapenos (optional)
1-1.0 oz pkg taco seasoning
1/4 bbq sauce
1 tbsp red chili flakes (adjust to taste)
2 tbsp smoked paprika (regular paprika will work as well)
Tbsp. chili powder
tsp. ground cumin
boneless pork shoulder (2-1/2 lb.)
1/2 cup grated cheddar
1-1/4 cup sour cream 
1/2 cup green onions, thinly sliced (optional)

* I used an 8 quart slow cooker for this recipe.  If you have a 6 or 6.5 quart slow cooker, you will need to cut down your recipe and use 1-28 ounce can of baked beans instead of 2-28 ounce cans and reduce the 3-10 oz cans of RO*TEL to 2-10 ounce cans.



Directions:

Combine all ingredients except meat, cheese and sour cream in slow cooker. Add meat; cover with lid. Cook on LOW 10 to 12 hours (or on HIGH 7 hours).

Remove meat from slow cooker. Shred meat; return to slow cooker. Stir.
Serve and top with cheese, sour cream, and green onions (optional). 

Out of this World Home-Cured Bacon from The Ivory Hut and Michael Ruhlman


Last summer I was fortunate enough to sample some home-cured bacon from a friend.  I must say it was so much better than anything you could possibly buy at the store.  I love the fact that you can slice it as thin or as thick as you like depending on your preference and you can get creative and experiment with the flavors as well.  Today, I am sharing a recipe from The Ivory Hut and Michael Ruhlman for Home-Cured Bacon. Besides the seven days it takes for the curing process....this recipe is cinch to make since you finish it off in a warm oven for 90 minutes.  Be sure to make extra so you have enough to last all week because once you taste this you will be sorry you didn't make enough to last a month. Fat Free Crispy Oven Baked Cinnamon & Sugar Apple Chips


Ingredients:


5 medium Granny Smith apples, sliced thinly

ground cinnamon
sugar


Directions:

Slice apples in uniform think slices using a mandolin. Place cinnamon and sugar in a gallon ziplock bag. Add apples to ziplock bag with cinnamon and sugar mixture and shake until all apple slices are covered. 
Place on a parchment or silicone baking mat lined baking sheet. Slices can touch each other, but try not to overlap them as they will not crisp evenly. Fit as many apples on a sheet as you can. They do not have to lay perfectly flat.

Bake apples at 170 for 6-8 hours, until dry and slightly shriveled, and curled up around edges. Turn off oven and leave door shut until completely cooled. Remove apples from baking sheet and store in an airtight container.

Chocolate Cherry Cordial Cookies


Ingredients:


1/2 cup butter, softened
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 teaspoon almond extract
2 cups flour
1/2 cup chopped maraschino cherries, well drained and patted dry
10 milk chocolate cordial cherries, roughly chopped

Directions:

Preheat oven to 350 degrees and line baking sheets with a Silpat or parchment paper.

In a medium bowl, mix with an electric mixer on medium-high speed for 30 seconds. Add the sugar, baking powder, baking soda, and salt. Beat until combined, scraping the sides of the bowl occasionally. Beat in the egg and almond extract. Beat in as much of the flour as you can with the mixer. Add
 the cherries and chopped cordial cherries and carefully stir to incorporate into cookie dough.

Make dough into one inch  balls and place two inches apart on your baking sheet. Bake for 10 to 12 minutes, or until the bottoms are light golden brown. Transfer cookies to a wire rack and let cool.

So Simple One Step Slow Cooker Cheesy Sausage Ravioli


Ingredients: 



1-6.4-8 oz oz pkg lite brown and serve  sausage links (I use Morningstar Farms sausage links)
1-15 ounce jar four cheese Alfredo pasta sauce 
1-24 oz jar three cheese tomato pasta sauce
1-14.5 oz can Italian diced tomatoes
1 tsp garlic powder
1/2 cup onion, finely chopped 
1-2 tbsp fresh parsley (you can also use dried)
2 cups mozzarella cheese, shredded 

1-24 ounce package frozen ravioli (any variety)


Directions: 

Cook sausage links and break up into pieces. Spray slow cooker with non-stick spray. Mix half of sausage pieces, pasta sauces, diced tomatoes, garlic powder, parsley and chopped onion together in slow cooker. Add half of a package of the ravioli, top with 1 cup of the cheese. Top with remaining package of ravioli and 1 cup cheese. Pour remaining ingredients over the top. Cover and cook on low for 5-6 hours. Serve with crispy Italian bread.

Easy Slow Cooker Korean Short Rib Tacos with Cucumber Oriental Slaw


Ingredients:


Korean Short Ribs:
5 cloves garlic
1-½ whole inches of ginger, peeled and chopped
¾ cups soy sauce
½ cups plus 3 tbsp brown sugar
6 tablespoons rice vinegar
2 tbsp sesame oil
1 teaspoon red pepper flakes
3 pounds beef short ribs

Cucumber Slaw:
½ whole hot house cucumber
½ whole carrot
1/4 cup lite Oriental sesame dressing
red pepper flakes
cilantro, chopped

4 corn tortillas

oil for frying
2 Tablespoons cilantro for garnish

Directions:

For the Korean short ribs:

Chop garlic and ginger until minced. Mix with soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes.

Place short ribs in slow cooker and pour sauce over ribs. Turn slow cooker on low heat. Cover with a lid and cook for 6-8 hours.

Remove meat from pot, discard bones. Place in the fridge to chill.

Meanwhile, skim fat off the top of the sauce. Place in a sauce pan and simmer until thickened.

Once meat is cool, pull apart with your fingers. Pour about 1/2 cup of the sauce back into the meat. You may serve the extra sauce on the side or discard it.

For the cucumber slaw:

Peel cucumber and chop into matchsticks. Peel carrot and shred.

Mix carrot and cucumber with salad dressing, red pepper flakes and cilantro. Set aside.


Add 1 tbsp oil to a non stick frying pan. Heat until oil is hot and add corn tortillas. Brown on both sides. Keep a close eye on them as they cook very quickly. Drain on a plate lined with paper towels.

Serve meat on a crispy tortilla topped with slaw and additional cilantro.

Deliciously Decadent Salted Caramel Brownies


Ingredients:

Brownies:

½ cups butter
6 ounces semisweet, coarsely chopped
¾ cups sugar
2 eggs
½ tbsp vanilla
½ cups plus 2 tbsp all purpose flour
¼ teaspoons salt

Caramel Layer:

14 ounces caramels, unwrapped
4 tbsp plus 4 tsp heavy whipping cream
1/4 teaspoons sea salt, plus 1/2 tsp for sprinkling on top

Directions:

Preheat your oven to 350 F. Line a 9×9 pan with aluminum foil, leaving a few inches hanging over the sides. Spray the bottom and sides of the foil generously with nonstick spray. Set aside.

Put the stick of butter into a microwave-safe bowl. Put it into the microwave for several seconds and melt the stick of butter. Add the chocolate and let it sit for 30 seconds to 1 minute. Stir and if the chocolate isn’t fully melted, microwave for additional 30-second intervals until smooth, stirring in between.

In a large mixing bowl, mix together sugar, eggs and vanilla until incorporated. Add in the butter/chocolate and mix until thick and glossy (about a minute). Stir in the flour and table salt until just combined.

Pour half of this mixture into the greased pan and spread it to the corners. Bake for 20 minutes, then remove it from the oven and let it cool for 20 minutes.

Place the caramels, cream and 1/4 teaspoon sea salt in a microwave-safe bowl. Heat it in the microwave in 30-second intervals, stirring in between, until smooth and creamy. Pour half of the caramel over the cooked brownies and spread to the corners. Pour the rest of the brownie mixture evenly over the caramel and spread to the corners.

Sprinkle 1/4 teaspoon of sea salt on top of the brownie batter. Bake for 18-20 minutes or until the center is set. Allow to cool for at least 15 minutes and then pour remaining caramel over the top of brownies and sprinkle remaining sea salt over caramel layer. if caramel sauce gets too thick, you can microwave it for 10 seconds intervals to make spreading a bit easier. Cool completely before lifting the brownies out of the pan.

Panko Breaded Swai with Fresh Avocado Salsa & Sour Cream


Ingredients:


4- 8 ounce Swai fillets
1 cup flour
2 cups panko bread crumbs
1/2 tsp sea salt
1/2 tsp pepper
2 eggs, beat with 2 tsp water
olive oil
avocado salsa (see recipe below)
scallions, thinly sliced

Directions:

Rinse and pat dry the Swai fillets and place on a paper towel, set aside.

Add flour, Panko, and salt to a gallon sized plastic zip bag, mix and set aside.

Beat 2 eggs and water together in a medium sized bowl or a deep plate.

Prepare a baking sheet covered with paper towels for fish when it is done cooking and set aside. Heat a frying pan with oil until it reaches 350 degrees.

Dip fillets, one at a time, in egg mixture and allow excess to drip off. Place the fillet in the panko mixture, zip bag closed and shake until coated.

Press breadcrumbs into fish. Place one large fillet in pan and cook for 4 minutes on each side. You may to cook a little longer depending on the thickness of the fillet.

When the fish is golden brown, remove from pan and set on prepared baking sheet to remove excess oil. Repeat with remaining fillets. Serve with avocado salsa, sour cream, and sliced scallions.

Fresh Avocado Salsa:

Ingredients:

1 avocado, pitted and diced
1 tomato, diced
1-14.5 ounce can of diced tomatoes with garlic and peppers
2 cloves garlic, finely chopped
handful of cilantro, finely chopped
1/2 tsp sugar
salt & pepper to taste
juice of 1/2 a lime
4 large jalapeno flour tortillas
cooking spray

Directions:

In a medium sized bowl, combine diced avocado, tomato, canned tomatoes, garlic, cilantro, lime juice, sugar, and salt & pepper. Serve with prepared panko Swai.

Easy Savory Oven-Roasted Short Ribs


Amazingly delicious and tender! These Oven-Roasted Savory Short Ribs are so easy to make. Make a double batch and remove the extra meat to make sandwiches that are out of this world! This is one versatile meat that you can use to make numerous dishes. Enjoy!
Ingredients:

3/4 cup brown sugar

2 tbsp paprika

2 tbsp cumin

1/4 tsp cinnamon
1 tbsp fresh garlic, finely chopped

2 tsp garlic powder

1 tbsp salt

1 tsp cayenne

1 tsp pepper
1 tsp red chili flakes

4 pounds of short ribs, cut into 4 slabs

Directions:
Preheat the oven to 200˚F. Rinse the slabs and pat them dry. Combine the brown sugar, paprika, cumin, cinnamon, garlic powder, salt, cayenne and pepper in a large mixing bowl.
Center a slab of the ribs on a large piece of tin foil. Pat the spice rub over the ribs, rubbing it in on all sides. Place the ribs meat-side down on the foil and fold tightly into a packet. Repeat for the remaining slabs.

Place the packets on a baking sheet and put it in the oven. Bake the ribs for 4 hours, then reduce the heat to 175˚F and bake for 2 more hours, or until a fork easily penetrates the meat.
Open the packets and pour the juices into a saucepan. Bring the juices to a simmer over medium heat and reduce by about half, until they cling to a spoon. Skim the fat off the top and adjust seasonings.

Place the ribs, uncovered, in the broiler on high for 3-5 minutes,  or until they have charred slightly. Drizzle the sauce over them, then serv

Rheinlander Copy Cat Cheese Fondue


Ingredients:

1 pound processed Swiss American cheese slices
2 cups very dry white wine, Chardonnay or Chablis
2 cloves garlic, mashed
1 tbsp butter
1/4 tsp white pepper
1/8 tsp cayenne pepper
1 dash nutmeg
1/2 loaf Rye bread*
1/2 loaf French bread*

Directions:

Chop cheese slices. Set aside.

Add wine, butter, and seasonings to a heavy pot and bring to a boil for 15 minutes to reduce wine and cook out excess alcohol. 

Remove from heat and add cheese and set into double boiler.  Stir thoroughly with a wooden spoon until cheese melts into a smooth heavy sauce. Add white pepper, cayenne pepper and nutmeg. Stir to incorporate.

If fondue seems too thick, add more wine. If too thin, add more cheese.  Dice bread into 2-inch squares and brown lightly in oven. Keep fondue warm while serving, else a skin will form on the top.

* Check to see if you have a local German bakery in town. They will have many varieties of German rye bread to choose from that comes unsliced. This will be perfect for cutting into big cubes for dipping.
