Easy Grilled Korean BBQ Pork Chops


Ingredients:

2 tablespoons soy sauce
1 tablespoon chili garlic sauce
1 tablespoon toasted sesame oil
1 tablespoon brown sugar
1 tablespoon seasoned rice wine  vinegar
1 clove garlic, finely minced
1 tsp finely chopped fresh ginger
1 tsp red pepper flakes (optional)
1/2 cup hoisin sauce
2 pounds thinly sliced pork chops ( I used pork loin for this recipe)




Directions:




Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, garlic, ginger and red pepper flakes in a small bowl. 




Place marinade in a gallon zip bag and add pork.

Massage pork in bag to coat thoroughly and zip closed,

Place in refrigerator and marinade for at least 4 hours (overnight is best!)



Quickly grill on the bbq and serve with grilled vegetables and rice. Enjoy!


Amazing Loaded Baked Potato Salad


Ingredients:

8 medium sized russet (or approx. 4-6 large)
12 hard boiled eggs, sliced
3/4 cup mayo, adjust to taste
3/4 cup sour cream, adjust to taste
1/3 cup green onions plus 2 tbsp for topping
1/3 cup red onion, finely chopped
8 slices bacon, cut into bits, reserve 2 tbsp for topping
1-2 tbsp bacon drippings
1/3 cup sharp Cheddar cheese, grated
1 tbsp sugar
1 tsp dried dill
Ground black pepper, to taste
Salt, to taste
Paprika, to taste


Directions:

Cut potatoes into bite-size pieces (optional: keep a little of the skin on for a more baked-potato taste).
Boil the potatoes for approximately 25 minutes until fork tender but not too soft. 


Meanwhile, combine mayo, sour cream, chives, onions, bacon bits, bacon drippings, cheddar cheese, sugar, dill, black pepper and salt to form a dressing. Rinse potatoes and allow them to cool. 


Toss potatoes with dressing and chill overnight. Garnish with additional bacon bits, green onions and paprika. Refrigerate at least 2 hours before serving. Enjoy!

World's Easiest Cheesy Mashed Potato and Chicken Pot Pie


Ingredients:

1 rotisserie chicken, shredded with bones and skin removed

1 cup frozen mixed vegetables, thawed
12-18 oz cream of chicken soup (add less or more depending on how creamy you like it)
1/4 tsp finely ground pepper
2 cups mashed potatoes (homemade or premade)
1/2 cup low fat cheddar, shredded
2-9 inch refrigerated pie crusts




Directions:


Preheat oven to 400 degrees F.

Remove all skin and bones from a rotisserie chicken and shred or chop.

In a large bowl, add chicken, thawed vegetables, cream of chicken soup and pepper. Set aside. 


In a metal pie pan, add one of the two pie crusts. Press dough into pan. 


Pour chicken mixture over prepared dough in pie pan.

Spread cheese over chicken mixture.


 Spread mashed potatoes over cheese.



Unroll the second pie crust and lay it over the top. Pinch edges to seal.



Slide into the oven for 15 minutes, until lightly browned. Reduce heat to 375 and cook another 15 minutes, or until the crust is a deep golden brown.



Let rest 20 minutes before cutting into the pie. Enjoy!

So Easy Tomato & Pineapple Salsa


This salsa is so easy to make and can be used as an appetizer with chips and guacamole or add it to pulled pork or shredded rotisserie chicken for fantastic soft tacos. You can easily up the heat by adding additional jalapeno, or bring it back down by omitting the pepper and adding mild chilies in its place. This is a staple at our house and I hope you enjoy it as much as we do! 

Ingredients:

4 plum tomatoes, seeded and chopped
1-10 oz can Ro*Tel diced tomatoes and green chilies
1 cup fresh pineapple, finely chopped
1/2 cup chopped sweet red pepper
1/3 cup sweet onion, chopped
1/4 cup lime juice
3 tablespoons minced fresh cilantro
1 jalapeno pepper, seeded and finely chopped

Directions:

In a small bowl, combine salsa ingredients. if you want a finer salsa, place ingredients in a food processor until desired consistency is reached. Refrigerate and serve with your favorite chips or cook with shredded pork or chicken to make fabulous soft tacos. Enjoy!

Simply Delicious Homemade Salsa


This is a great salsa recipe because it is simple to make and tastes just like the salsa you can get at your favorite Mexican restaurant! Serve with some homemade guacamole and chips and you have an amazing appetizer that everyone will love. Enjoy!


Ingredients:
1- 14 oz can diced tomatoes
1- 10 oz can original Ro*tel
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed
1-4 oz can diced green chiles
1/2-4 oz can diced jalapenos (adjust to liking)
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground cumin
small to medium size handful of cilantro, finely chopped
juice of 1 lime


Directions:

Put all the ingredients in the base of a food processor and pulse to combine until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with homemade tortilla chips. Enjoy!

Additional recipe idea: Make a double batch and use the extra for Shredded Mexican Chicken by heating up two teaspoons of olive oil in a nonstick pan. Add the meat from one rotisserie chicken that has been shredded. Cook until browned and a little crispy on the edges. Add salsa and cook down until most of liquid is absorbed. Serve with warmed corn tortillas, sour cream, lettuce, and diced tomatoes.. Quick and easy deliciousness!

Fresh Avocado Salsa with Baked Jalapeno Tortilla Chips


Ingredients:

Avocado Salsa:

1 avocado, pitted and diced
1 tomato, diced
1-14.5 ounce can of diced tomatoes with garlic and peppers
2 cloves garlic, finely chopped
handful of cilantro, finely chopped
1/2 tsp sugar
salt & pepper to taste
juice of 1/2 a lime

Tortilla Chips:

4 large jalapeno flour tortillas
cooking spray
Toppings (optional):

sour cream
green onions, thinly sliced
Directions:
In a medium sized bowl, combine diced avocado, tomato, canned tomatoes, garlic, cilantro, lime juice, sugar, and salt & pepper. Set that aside. 

Spray each tortilla with cooking spray. Sprinkle lightly with salt. Stack tortillas and cut in half, in quarters, in eighths. Single layer on cookie sheet. Bake or broil 5 minutes at 350 degrees. Serve with avocado salsa, sour cream and green onions.
